This is my favourite soup, of those I’ve made at home. It’s full of nutrients and vitamins, but also satisfyingly creamy and delicious.
I serve it with garlic bread.
2 medium to large onions
2 medium to large potatoes
2 medium to large leeks
2 large carrots
2-3 vegetable stock cubes
single cream, if desired, to taste
Simply roughly chop the vegetables while melting the butter in a large pot. Throw in the veg and soften on medium heat for 15 minutes, stirring regularly.
Just cover the veg with freshly boiled water and stir in the stock cubes.
Simmer for an hour or so till the veg are all cooked, then blend still really smooth.
